VIDALIA ONION CASSEROLE

5-7 large onions sliced
Butter
Grated Parmesan cheese
Crushed Ritz cracker crumbs 

Separate the sliced onions into individual rings.
In a skillet melt enough butter to saute the onion rings. 
In a large casserole dish place a layer of the sauted onions. 
Sprinkle with the grated Parmesan cheese.
Top with crushed Ritz crackers.
Repeat the onion, cheese and cracker layer.

Bake at 350 degrees for 30 minutes.

Tee, Good morning! I came here hoping that onion casserole would be posted and you did not disappoint. It looks so good.

Back in the old days when I lived in Atlanta my grocery store had a sign in the produce department in the spring that they changed every day to give the count down to the first shipment of Vidalias.

I knew some people who had a big Vidalia onion ring party every May. They cut a bushel of Vidalias and deep friend them and had plates and plates of onion rings that we gorged on like idiots. But, hey, it was only once a year.

The casserole will be made this week. Yum.

I love vidalia onions! In the last month I think I have used about 10 pounds in recipes :) This looks great, yum!
